Bacon Wrapped Chicken Stuffed With Apples

Thin chicken strips stuffed with apples and wrapped in bacon.

Ingredients

  • 2 Boneless, Skinless Chicken Breasts (Sliced into thin strips, ~ 1/4)
  • 8-12 pieces Bacon, uncooked
  • 2 Apples (tart apples such as Granny Smith work best)
  • 2/3 cups Apple Juice or Cider
  • Marjoram

Directions

Step 1
Core apple and cut into thin slices.
Step 2
Place 2-3 apple slices onto 1 piece of chicken and roll up.
Step 3
Wrap 1 slice of bacon around the chicken roll and place into a baking dish. Repeat for all chicken. Secure with tooth picks if needed.
Step 4
Sprinkle top of rolls with marjoram.
Step 5
Pour apple juice into bottom of baking dish.
Step 6
Bake at 400 for 15-20 minutes, until chicken is cooked through.
Step 7
Broil on low for ~5 minutes to brown and crisp bacon.

A really great and different way to cook chicken – and it helps you “sneak” in some fruit, if you find it hard to get your family to eat fruit. This recipe works best with a tart apple such as Granny Smith, but really any apple will work. They are suprisingly filling too – serve with a salad or veggies and you’ll be full. It was a hit in my house, and I will definitely be making this recipe again!
