Tasty Tuesday: Blueberry Cream Cheese Bars

This is a yummy recipe for blueberry cream cheese bars with a shortbread crust. There is a bit of prep work involved, but it is well worth the effort! These are great for just about any occassion and you can use whatever type of berries you prefer – strawberries, raspberries, blueberries, etc. Enjoy!

Blueberry Cream Cheese Bars with a Shortbread Crust

Ingredients

  • 1.5 cups Flour (Crust)
  • 1/3 cup Sugar (Crust)
  • 1/2 cup Butter, softened (Crust)
  • 1 Egg Yolk, beaten (Crust)
  • 1 cup Blueberries, fresh or frozen (Blueberry Filling)
  • 1 tablespoon Cornstarch (Blueberry Filling)
  • 4 tablespoons Orange Juice or Lemon Juice (Blueberry Filling)
  • 2 teaspoons Sugar (Blueberry Filling)
  • 8oz Cream Cheese, softened (Cream Cheese Filling)
  • 1/2 cup Sugar (Cream Cheese Filling)
  • 1 tablespoon Flour (Cream Cheese Filling)
  • 2 Eggs (Cream Cheese Filling)
  • 1 teaspoon Vanilla Extract (Cream Cheese Filling)

Directions

Crust
Step 1
Mix together flour and sugar.
Step 2
Add yolk and butter, Mix thouroughly using your hands.
Step 3
Press evenly into a 9x9 pan with your fingers.
Step 4
Bake at 400 for ~ 25-30 minutes until it begins to brown slightly.
Filling
Step 5
In a small sauce pan add blueberries, juice, cornstarch, and sugar. Heat on medium until sauce thickens and become bubbly. Remove from heat.
Step 6
Mix together cream cheese and sugar. Slowly mix in flour.
Step 7
Add eggs and vanilla, mixing well.
Step 8
Pour cream cheese mixture over crust and spread evenly.
Step 9
Use a spoon to drop spoonfuls of blueberry mixture on top of cream cheese.
Step 10
Use a knife or spatula to swirl the blueberries through the cream cheese.
Step 11
Bake at 350 for ~20 - 25 minutes, until top begins to brown slightly and bars are set.
