Tasty Tuesday: Blueberry Cream Cheese Bars

This is a yummy recipe for blueberry cream cheese bars with a shortbread crust. There is a bit of prep work involved, but it is well worth the effort! These are great for just about any occassion and you can use whatever type of berries you prefer – strawberries, raspberries, blueberries, etc. Enjoy!

Baked Ziti Recipe

I know I haven’t been posting many recipes lately, but here is one I wanted to share. Though I made this gluten-free, you can also use regular pasta in it as well. Enjoy!  Baked Ziti Recipe

Tasty Tuesday: Buffalo Chicken Wing Dip

Here’s an easy recipe that combines all the things you love about buffalo chicken wings but in a much easier and less messy form. If you love wings, you’ll love this dip. It’s best served warm with tortilla chips or celery sticks. It’s always a hit at parties and we love to have it for a snack.

Tasty Tuesday: Bacon Wrapped Chicken Stuffed with Apples

A really great and different way to cook chicken – and it helps you “sneak” in some fruit, if you find it hard to get your family to eat fruit. This recipe works best with a tart apple such as Granny Smith, but really any apple will work. They are suprisingly filling too – serve with a salad or veggies and you’ll be full. It was a hit in my house, and I will definitely be making this recipe again!

Tasty Tuesday: Easy Chicken and Dumplings

Here’s a yummy and easy meal, perfect for a chilly winter day. I love this because you can use whatever vegetables your family likes, it’s easy, and it doesn’t take a long time to cook!

Tasty Tuesday: Homemade Beef & Spinach Ravioli

I decided to make homemade ravioli for dinner on Valentine’s Day (thus the heart shapes). I prefer cheese, but my husband is a beef guy so I gave this a shot. They were delicious and though they aren’t as easy as going to the grocery store and buying some frozen ravioli, they were definitely worth the work! And you can make them the size/shape you want – perfect for a special occassion or just an every day dinner!

Tasty Tuesday: Easy Apple Crisp

A yummy and easy to make apple crisp! You can use Splenda sugar in this one – it tastes just as good. It can be made with whatever type of apple you prefer, though I like Granny Smith to make it a little tart.

Tasty Tuesday: Oven “Fried” Pickles

I love pickles and well, these may just be the tastiest thing I’ve made in awhile! If you’ve ever had the fried pickles at TGI Friday’s you know how yummy they are, but not so healthy since they are deep fried. Well here is a healthier (and cheaper) way to enjoy these yummy treats! Vegetable Cheese Chowder

January is National Soup Month and it seems fitting – the weather is getting colder and we’re always looking for something to warm us up! If you need some ideas for a tasty soup recipie, here’s a vegetable cheese chowder I made. It’s great because you can tailor it to your family’s preferences and add whatever veggies they like. My favorites are broccoli, cauliflower, peas, corn, green beans, and carrots.

Ingredients:

  • 10 oz fresh or frozen vegetables of your choice (I used mixed veggies and I added more than 10 oz :) )
  • 1/2 cup shredded carrot
  • 1/2 cup water

Sopapilla Cheesecake Bites

You may have seen recipies for Sopapilla Cheesecake, but I decided to modify this a bit to make it bite sized (therefore more kid-friendly and less messy for me!). I made these using Splenda and they came out great! Of course you can use regular sugar too.

3/4 cup Sugar
1 tsp Vanilla Extract
1 tsp Cinnamon
2 tubes of refrigerated Crescent Rolls
