A really great and different way to cook chicken – and it helps you “sneak” in some fruit, if you find it hard to get your family to eat fruit. This recipe works best with a tart apple such as Granny Smith, but really any apple will work. They are suprisingly filling too – serve with a salad or veggies and you’ll be full. It was a hit in my house, and I will definitely be making this recipe again!

Tasty Tuesday: Homemade Beef & Spinach Ravioli

I decided to make homemade ravioli for dinner on Valentine’s Day (thus the heart shapes). I prefer cheese, but my husband is a beef guy so I gave this a shot. They were delicious and though they aren’t as easy as going to the grocery store and buying some frozen ravioli, they were definitely worth the work! And you can make them the size/shape you want – perfect for a special occassion or just an every day dinner!

If you love cake, you will love these super easy (and healthier for you!) cupcakes. Skip the oil and eggs. All you need is a box of cake mix and a can of soda or sparkling water. I was doubtful this would even work, let alone taste good but I was pleasantly surprised.
